Brunch/Lunch Goals: A Meal of Plantain (Simple Recipe)

Please help me welcome Plantain back into the mix. How do people even survive without it. It’s just so vital! Not only for healthy reasons, but also Sanity. Because, you know…Plantain! It takes many shapes and forms, Fried, Boiled, Mashed etc.

Today it takes the form of being Turmeric, Chilli and Cinnamon spiced and Grilled! Accompanied with a nice, hearty portion of Lean Ground Beef, Mixed vegetables and Okra!

Again, super duper simple….

1. Slice the plantain across, season and grill in an oven
2. Chop Tomatoes, Onions (Red & Spring), Season and fry in a pan (Till that aromatic scent fills the place)
3. Pop in the beef, season some more and stir till fully cooked. Drain for excess fluid (or keep if you like) and add in the veggies.
4. Cook for a bit longer. Remove the plantain and serve both.

I love very simple meals, because, when hunger strikes, it has you eating in literally no time! Opposite of complex, super tasty and Macro/Micro Nutrient packed! 💪🏾
